A structured lipid (SL) containing medium chain fatty acid has health benefit and it has been studied for functional food especially as nutraceutical food. In this research, enzymatic synthesis of mediumchain SL from lauric acid and glycerol was studied using Candida rugosa lipase. Factors such as enzyme loading, reaction time, temperature, molecular sieve, and molar ratio of substrate (mmole lauric acid/mmole glycerol) were evaluated. The results showed that the best conditions for the synthesis of the medium chain SL were the reaction at temperature of 37°C for 24 h. The lipase loading, molecular sieve adding,and mol ar ratio of substrate were 80 mg, 0.1 mg, and ratio of 3:1, respectively. The results also showed that Candida rugosa lipase can be used for glycerides synthesis in which the mol ar percentage of monolaurin, dilaurin, and trilaurin were 15.55 %, 10.29%, and 1.41%, respectively. |
