A Garlic (Allium sativum L) is an agricultural commodity from a group of vegetables that is highly demanded in Indonesia. Due to the high volume of import, local garlic farmers cannot sell their harvested local garlic due to the less competitiveness with imported garlic, especially during the Covid-19 pandemic. Therefore, community enhancement during the pandemic covid-19 through the implementation of garlic pasta processing machine for improving the added value of domestic garlic as an innovative tool is proposed. This project is aimed to exploit the potential of garlic harvest so that it can be absorbed by the market with added value and increase the income of local farmers. The potential output of this project is to economically support the farmer, to support sustainability of local garlic farming, and protect the local garlic species against extinction. Based on the mentioned background, there is a need for a cheap and efficient grinding machine design that processes garlic into paste as well as knowledge of processing technology that can be accessed by the farmer. The design of the garlic grinding machine has been carried out using the adaptive design method which is done by modifying a commercial coconut grater machine into a garlic grinding machine. The garlic grinding machine has dimensions of 570 x 410 x1070 mm and uses a single knife for the milling process. Based on the design analysis, it has been analyzed that the optimum performance for milling capacity of 10 kg/hour requires rotation of grinding knife of 1659 rpm and the minimum motor power for grinding is 0,437 kW. The dissemination of knowledge has been carried out by providing tutorials using video/visual media. |
