Consumer preferences influence market acceptance. Colour and taste are two key drivers of product acceptance. The elucidation of the genetic regulation of taste and colour variation in cucurbits, particularly melon, watermelon and cucumber, requires a comprehensive review. By examining the complex interactions of genes and their roles in taste perception and pigment synthesis, this review summarises the molecular basis of taste and colour variation in cucurbit species. In addition, the review extends to the metabolites involved in these processes and elucidates their relevance and impact on the overall quality of cucurbit crops. The results of this review contribute to a comprehensive understanding of the genetic landscape responsible for cucurbit sensory traits and provide insights to inform future breeding strategies to improve taste and colour profiles for improved crop development and agricultural sustainability.
